the best chocolate chip cookies
homemade chocolate chip cookies might be one of the ultimate comfort food. a handheld offering of friendship or a pocket sized consolation for a bad day. have you ever said no to a cookie? this recipe is my adaptation of my mom's recipe, which is an adaptation of my grandmother's recipe. feel free to swap out the chocolate chips for other fillings too - nuts, dried fruit and white chocolate chips all work well too!
ingredients:
- 1 cup salted butter
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 3/4 cups of all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 2 cups semi sweet chocolate chips
recipe:
- preheat oven to 350 degrees
- allow butter to soften on the counter or in the mixing bowl
- in a large mixing bowl cream butter and sugar with electric beaters until smooth
- add vanilla and eggs and beat well
- through a seive, sift in flour, salt and baking soda. beat until combined
- add chocolate chips and combine with a wooden spoon
- spread 1" balls of dough on a cookie sheet with enough space for them to expand while baking
- bake for ten minutes
- allow to cook on wire cooling racks
cookies will keep for about a week in a sealed container or keep them in the freezer and defrost them in smaller quantities. you can also freeze the cookie dough in ready-made balls to bake fresh cookies at a moment's notice!
