lemon ginger immune booster

it's the beginning of february and winter is decidedly closed in around us. keep warm and keep colds at bay with this magic mix. the combination isn't groundbreaking but what i've found so helpful is keeping a jar of the mix in the fridge through the winter, ready to add to boiling water when i'm feeling like my immune system could use a boost. lemon, honey and ginger are all full of antioxidants, the water is hydrating and the honey is so soothing for a sore throat. all prepped and ready whenever you need it - so simple.

ingredients:

  • 1/4 cup of honey
  • 1" of ginger root sliced in thin rounds
  • juice of two lemons
  • 1 cup of water

recipe

  1. combine all ingredients in a small saucepan on medium low. stir slowly until honey melts
  2. lower heat and let simmer gently for 20 minutes, stirring from time to time
  3. transfer liquid to glass jar or bottle (option to keep or remove ginger slices) and refrigerate. will keep for up to one week
  4. add 1 or 2 tablespoons to a mug of boiling water as needed to sooth or defend against a cold. option to add a fresh squeeze of lemon or a slice of ginger too.
  5. sip and enjoy

 

(note - i can't actually say this will prevent or cure a cold, but it definitely makes me feel better when i'm sick or when i feel like i'm coming down with something. it's also not technically "magic".... but it seems to help!)
